Chocolate Tortellini with hazel nut and red orange sauce
Ingredients to make fresh pasta
- 350 gr plain
- 50 gr cocoa powder
- 1 tbs almond oil
- 2 eggs
Place the plain on a wooden flat surface and make a well in the middle. Whisk the eggs with almon oil and pour them in the middle of the flour. Work the flours and the eggs with a fork, then start kneading the dough, pouring cold water little by little, (if necessary, 3 tbs of cool water) until the dough gets soft, elastic and it doesn’t stick to your fingers anymore. You’ll need about 10 minutes. Let it rest for about 30 minutes in the fridge.
Ingredients to make the filling:
- 50 gr butter
- 50 gr sugar
- 175 ml milk
- 1 tbs vanilla extract
- 1 eggs e 1 yalk to seal tortellini
- 25 gr pain
- 50 gr hazelnuta (he uses almond)
- 6 amaretti biscuits chopped
- 50 ml orange liquor (I used only orange zest)
Mix all ingredient and let it rest for about 30 minutes in the fridge.
Now, roll the dough: you can use a classic rolling-pin or the pasta maker. . Cut the pasta sheets first into 10 cm diameters circles. Place small pinches of filling in the center of each square of pasta and crimp into a triangle, sealing the edges. Hold the two sides of the triangle between your thumbs and your forefingers, overlap the two sides and seal them together.
Ingredient to make tha sauce
- 4 red orange
- 50 gr sugar
- 400 ml cream
For the sauce, grate the orange zest, collect the juice of 3 of them and pick the other one. Boil 50 gr water and the sugar, put the juice and the zest and boil for 2 minutes. Mix the cream anc cook for 1 minute. Add the segment.
Throw trotellini in boiling water for 3 minutes, put the orange sauce in your dishes and put down tortellini.
